Blueberry Cheesecake Ice Cream

HOLY MOLY!!!! Those are the words I shouted after taking the first bite of this ice cream. Ok, the “moly” may have been replaced with another four letter word that started with an 'S' & ended with a 'T'. What can I say?! I can’t control it sometimes; I fucking LOVE good food. Actually, I just love food, period.


After shouting, my three-year-old came rushing over to me worried & saying, “MOMMY WHAT’S WRONG????”. He proceeded to look at what I was holding in my hands & then started begging like... well, a child ;)


You want to know what makes this recipe better than most?? It uses REAL CREAM CHEESE, just like in a real cheesecake! A lot of the recipes I was browsing called for Jell-O cheesecake pudding mix. NO THANKS. I like knowing what’s in my ice cream… cream cheese, without the addition of chemicals that I can’t pronounce.


This ice cream is 100% heaven; it literally tastes exactly like blueberry cheesecake!!! Don’t worry, the crunchy graham cracker bits do indeed STAY crunchy!! That’s why it’s important we bake them in order to crisp them up. If you were to just crush graham crackers & put them in, they would get all sogg-a-log very quickly.

 

I am going to make sure I always have this ice cream in my freezer from now on. No, it’s not low calorie, low fat, low sugar, paleo, or dairy-free… but it’s gluten-free, & that’s a damn good start! You gotta remember to indulge every once in a while. Unless you’re lactose intolerant than most definitely, DO NOT make this! I don’t want to make you poo your adult pants, especially near Valentine’s Day :]

Serves: 9” x 5” pan

Prep Time: You tell me…

 

SHIT YOU’LL NEED:

|  BLUEBERRY BLISS SAUCE  |

1 ½ cups blueberries, fresh or frozen (I prefer fresh)

1 tbsp lemon juice

½ cup sugar

1 tbsp cornstarch

½ cup water

 

|  CRUNCHY GRAHAMS  |

1 cup GF graham crackers, crushed (I use Kinnikinnick Foods brand, & although I don’t care for it, in this recipe you cannot even tell they’re weird hahaha)

2 tbsp butter, melted

1 tbsp sugar

 

|  ICE CREAM BASE  |

2 ½ cups half & half, COLD

1 (8-ounce) package cream cheese, room temperature

½ cup sugar

¼ tsp salt

1 tbsp FRESH lemon juice

1 tsp pure vanilla extract

1 tbsp vodka *optional, but c’mon… live a little

 

HOW TO DO THE SHIT:

|  BLUEBERRY BLISS SAUCE  |

1.    In a small saucepan, combine sugar & cornstarch.

2.    With heat on low, gradually whisk in water until smooth.

3.    Stir in blueberries & lemon juice; bring to a boil.

4.    With a fork, SLIGHTLY mash some blueberries (not all of them).

5.    Reduce heat & simmer, uncovered, for 5 minutes or until slightly thickened, stirring occasionally.

6.    Cover & refrigerate until completely chilled (1-2 hours).

 

|  CRUNCHY GRAHAMS  |

1.    Preheat oven to 350F. In a small bowl mix crushed graham crackers, melted butter & sugar. Spread mixture onto ungreased cookie sheet. 

2.    Bake for 10-15 minutes, or until lightly browned; cool completely.

 

|  ICE CREAM BASE  |

1.    In a blender, combine the cold half & half, cream cheese, sugar, salt, lemon juice, vanilla, & optional vodka. Blend on high until smooth.

2.    Turn your ice cream maker on & in a SLOW steady stream, pour in the ice cream base. Churn the ice cream according to the manufacturer's instructions; mine took 30-35 minutes.

3.    During the last minute of churning, add the crunchy grahams!! F YEA.

4.    In a freezer-safe container, add ¼ of the ice cream base & swirl in a heaping spoonful of the blueberry bliss sauce.

5.    Add another ¼ of the ice cream base on top of that, & swirl in another heaping spoonful of the blueberry sauce. Repeat until all the ice cream is in your container. NOTE: I had about ½ cup leftover of the blueberry sauce. I served it on top of the scooped ice cream!

6.    Freeze overnight & enjoy it ALL the next day. I dare you to try to contain yourself ;)
