My gal pal & I went to a new Peruvian restaurant in town & I’ve been inspired to cook outside of the box ever since ;) This recipe happened to pop up on my Pinterest (FATE)! This stuffed avocado shrimp salad is a popular Peruvian dish known as Palta Rellena! This recipe is most definitely a Pinterest nail <3

 

Creamy avocado stuffed with a juicy shrimp salad & topped with a zesty cilantro lime sauce. It’s super fresh, bright, tangy, creamy & downright refreshing!

 

This dish makes for a perfect healthy lunch or appetizer! It couldn’t be ANY easier or more delicious!

SHIT YOU’LL NEED:

|  DRESSING  |

6 tbsp mayo

2 tbsp minced fresh cilantro

¼ tsp kosher salt

¼ tsp cayenne **can leave out of cooking for children

|  SHRIMP SALAD  |

1 ½ cups cooked shrimp, cut in half

¼ cup grape tomatoes, halved

¼ cup red onion, finely diced

¼ cup freshly chopped cilantro

¼ cup freshly squeezed lime juice

¼ cup sliced black olives

3 avocados, semi-soft

kosher salt & freshly ground black pepper, to taste

 

HOW TO DO THE SHIT:

|  DRESSING  |

1.    In a small container, mix the dressing ingredients well. Cover & chill until ready to use.

|  SHRIMP SALAD  |

1.    If you bought cooked shrimp, do nothing & proceed to step two! If you need to cook your shrimp, just sauté it up with some salt, pepper & olive oil. I always opt to cook my own—I get weirded the F OUTTT buying cooked shrimp.

2.    In a bowl, combine the cooked shrimp, tomatoes, red onion, cilantro, lime juice, olives, salt, & pepper. If making ahead of time, cover & keep chilled until ready to serve.

3.    When ready to serve, slice avocados in half & remove pits carefully. If desired, slice a bit off the bottom halves so that avocados can stand without tipping over. Fill each avocado half with shrimp salad. Drizzle with the dressing & serve immediately!!
