Kale White Bean Fennel Salad

After being pretty quiet on the blogging front due to moving states, I’M BACK IN ACTION!! As we aren’t settled in completely yet, I was trying to think of something fast & easy I could whip up for dinner! Aaaaaand that is how I came up with this salad; perfect for a weeknight meal. I paired it with a flaky baked halibut & it was phenomenally complementary!

 

My husband said, & I quote,Maaan! Wow, such good flavor! It’s very bright, crisp & cool. It’s a good recipe with summer coming up”! Ö YES, I SHIT YOU NOT. My mouth about dropped open! I told him he must be reading someone’s blog too much ;) ;) He basically summed up this recipe for me so my job is done!! ^^^ Listen to my sweet hubby! This salad is even more bomb the next day after the flavors have all night to infuse. To answer your question, no, the kale does not get wilted & weird. That's one of the reasons I love this salad!

 

Now let’s get down to some nitty gritty behind the scenes REALITY for a second, because let’s be honest, we all want the damn truth.

 

1. Let me set the scene. I have real wood backdrops that I made/use for my food photography. I lay one on the floor & another one up against the backside, usually propped up with whatever chair is closest. They are HEAVY ass boards. I am crouched down on my knees taking photos of this dish while my toddler is frolicking about behind the backside of the board—problem number ONE! Problem number two? He is my child, which means he is as clumsy as a newborn Bambi. As I’m clicking away, BAAAAAM, I am practically KO’d by the propped up board. I see my son slowly walk out from behind the board looking wide-eyed & as guilty as the cat that ate the canary! It hurt soooo bad that my immediate reaction was to yell at my son to get out of the room because I kind of feared for his life. Joking! …well, joking for the most part ;)

2. Because ^^^… I have an ENORMOUS goose egg on the middle top of my forehead & a nose that looks like I was just in a boxing match, where I lost, HARDCORE!

3. My computer literally crapped out mid-writing this post, & I had to rewrite it. I know I know, save your work as you go. Well you know what? Sometimes I just don’t.

4. Beans make you fart & that’s just going to happen. Don’t fight it 8)

5. I’m hoping my next post goes more smoothly. If not, I SURRENDER. You’ll just find me balled up & sobbing on the floor of the kitchen pantry, NBD.

Prep Time: You tell me...

 

SHIT YOU’LL NEED:

|  LEMON + GARLIC DRESSING  |

¼ cup EV olive oil

½ lemon, juiced

1 tsp dijon mustard

1 clove garlic, peeled

1 large sprig rosemary, destemmed

2 sprigs parsley, destemmed

½ tsp kosher salt

¼ tsp garlic salt

¼ tsp fresh cracked black pepper

 

|  SALAD  |

2-3 (large) leaves curly kale, de-stemmed & thinly sliced

1 bulb fennel, cored, thinly sliced

1 13.4oz can cannellini beans, drained & rinsed

½ lemon, juiced

drizzle EV olive oil

pinch salt

 

HOW TO DO THE SHIT:

|  LEMON + GARLIC DRESSING  |

1.    Add all dressing ingredients to a food processor & blend until completely smooth! Taste & adjust seasoning (but it’ll probably be good since I’m an over-salter)! Set aside.

 

|  SALAD  |

1.    Drain & rinse cannellini beans. Set aside.

2.    Wash & de-stem kale; slice thinly. Place sliced kale in a large bowl & drizzle a bit of olive oil over the top & sprinkle with a pinch of salt. With your hands, “massage” (rub) the leaves of kale to remove the bitterness. Don’t pass this step up, it makes a huge difference! It also helps to soften the tough leaves.

3.    In the bowl with kale, squeeze the juice of ½ of the lemon over the top & add your beans & sliced fennel.

4.    Pour the lemon & garlic dressing over the salad & give it a good toss!! BAM—delish dinner!
