Ok, hear me out, I too was super skeptical when I saw a salmon patty served over cabbage...

 

I thought to myself:

1)    That seems like a super fucking weird combo.

2)    Cabbage makes me toot toot (not sexy).

3)    Will this dinner ACTUALLY fill my belly?

4)    Will it even be tasty?????

 

THE RESULT: A freaking deeeeeelicious combination that did, in fact, FILL my belly. We are talking feeling FULL after eating! Yes, it’s true! You really can eat healthily, feel full & have it taste absolutely BOMB!!!

This dish is super light, crisp, refreshing & a bit tangy! The perfect fast & easy weeknight meal (or lunch)!

Serves: 5-6 patties

SHIT YOU’LL NEED:

|  SALMON PATTIES  |

¾ lb salmon, cooked (you can poach, pan fry, sauté etc) 

2 eggs

¾ cup gluten-free panko breadcrumbs (yes, they have them!!)

1 teaspoon salt

1/2 teaspoon garlic powder

1/4 cup chopped fresh herbs, like chives, parsley, or dill (I used parsley & dill)

a squeeze of lemon juice

olive oil for pan-frying

 

|  CABBAGE SLAW  |

1 head green cabbage, finely shredded

1 cup plain Greek yogurt

2-3 tablespoons white distilled vinegar (more to taste)

½ lemon, juiced

1 teaspoon salt

Fresh cracked pepper

1/2 teaspoon garlic powder

1/2 cup chopped fresh herbs like chives, parsley, dill, or cilantro (I used parsley & dill)

a drizzle of olive oil

 

HOW TO DO THE SHIT:

|  SALMON PATTIES  |

1.    Flake the cooked salmon. Mix all burger ingredients together & form into 5-6 patties.

2.    Heat olive oil over medium heat, ideally in a nonstick skillet. Fry the burgers for a few minutes on each side until golden brown & crispy.

3.    Place on a paper towel lined plate & sprinkle with coarse salt.

 

|  CABBAGE SLAW  |

1.    Mix all cabbage slaw ingredients together & taste to adjust seasoning. Add more salt etc.

2.    Serve salmon patties over slaw & be amazed at the depth of flavor!
