Summer Chickpea Salad | GF + Vegan

Chickpea Salad

This is the ultimate summer dish!! I like to make this recipe & have it in the fridge for lunches, or for just a quick snack! The longer it marinates in its own juices, the BETTER!

 

It’s cold, crisp & refreshing.

 

It tastes light, lemony, a bit tart, juicy, & deliciously crunchy! This recipe takes no time at all to make & is highly rewarding in the flavor department. Not to mention all of the amazing health benefits of chickpeas! You can look them up yourself, I said I wasn’t going to mention them ;)

 

Don’t be basic. Make this instead of your usual boring side dish <3

 

 


Serves: 4 small side dishes

SHIT YOU’LL NEED:

15 oz can chickpeas, drained & rinsed

1 medium cucumber, deseeded & diced

1 cup farmer tomato medley (aka the tiny tomato pack with all sorts of colors)

¼ red onion, small diced

1 garlic clove, grated

Juice AND zest of 1 lemon

2 Tbsp olive oil

¾ tsp kosher salt

½ tsp garlic salt

¼ tsp garlic powder

Fresh cracked pepper, to taste

 

HOW TO DO THE SHIT:

1.    Mix together ALL of the ingredients thoroughly. Taste & adjust seasoning if desired.

2.    LITERALLY DONE.
