Dalgona Matcha + honey vanilla syrup

…Just kidding, every day is Friday when you’re in quarantine! *one of the perks*

 

I know dalgona coffee is the new craze, but I got to be honest… I’m OBSESSED with matcha.

 

So naturally I just HAD to make dalgona matcha (aka whipped matcha goodness)! This recipe is kicked up crude mom style though. I made a homemade honey vanilla simple syrup that blends seamlessly with the whipped matcha & almond flavored milky drink!

 

It’s creamy & sweet with notes of subtle almond... & of course it packs a mean PUNCH of matcha! You’ll be GOOD on caffeine until tomorrow. Don’t worry—I GOT YOU! I see you, tired people.

 

Traditional recipes use whipped egg whites, but I’m NOT about that life. If there is raw egg in my food or drink, the second I lift it towards my mouth & it wafts up my nose, I instantly GAG. We are talking exaggerated gagging & coughing (Phoebe style from Friends). You guys know what I’m talking about. SO instead of egg whites, I use heavy cream & sugar. That’s an acceptable replacement, right?! Haha. The phrase TREAT YO SELF was made specifically for this drink. It is insanely creamy & indulgent. It’s definitely a splurge drink! I normally waste my calories eating, not drinking. Lately however, I’ve been treating myself with both. DO WHAT MAKES YOU HAPPY.

 

I’ve tried a lot of brands of matcha, but I always go back to my absolute favorite: Aiya! This brand is top notch. Quality matcha is worth it, folks.

Confession: I did already film a dalgona coffee recipe, too. Hahaha!! Thank you to my friend, Andi, for turning me onto the whipped coffee phenomenon! There is NO going back to normal brewed coffee. I’m spoiled. Just like I’m spoiled with 3-ply toilet paper since the cheap shit (1-ply) is nowhere to be found.

 

Anyhow, I hope you guys try this indulgent milky drink! I guarantee it’ll rock your world.

Serves: 2

Prep Time: 10 minutes

 

SHIT YOU’LL NEED:

|  HONEY VANILLA SYRUP  |

¼ cup water

¼ cup raw honey

¼ tsp vanilla extract

 

|  DALGONA MATCHA  |

½ cup heavy cream

1 Tbsp + 1 tsp sugar

1 tsp vanilla

¼ tsp almond extract (or ½ tsp for a strong almond flavor—this is sort of to taste)

5 tsp matcha powder, sifted (my favorite brand is Aiya)

16 oz milk

Crushed ice

2 Tbsp honey vanilla syrup

 

HOW TO DO THE SHIT:

|  HONEY VANILLA SYRUP  |

1.    In a small saucepan, combine water & raw honey on medium-low heat.

2.    Bring to a boil & stir until the honey dissolves into the water.

3.    Remove from the heat & add the vanilla extract.

4.    Chill in refrigerator until ready to use.

 

|  DALGONA MATCHA  |

1.    In a bowl, combine the heavy cream, sugar, vanilla & almond extract.

2.    With a handheld mixer, whip the mixture until soft peaks form—about 3 minutes.

3.    Add sifted matcha powder & fold into the whipped mixture. (**NOTE: VERY important to sift your matcha. Just trust me!)

4.    Fill two glasses with crushed ice. To each cup: add 1 Tbsp of honey vanilla syrup & 8 oz of milk.

5.    Top each glass with the fluffy whipped matcha goodness!!

6.    Stir & SIP, SIP, HOORAY!!
