A true Californians breakfast!! I can at least pretend I’m back there sometimes ;)
When it’s cold & gloomy here in the PNW, this breakfast just sounds sooo appealing to me! It might not seem like anything special, but just wait until you taste all of these flavors together! Fucking YES 100x. While eating, my hubs just kept doing the silent nod & “MMMM”-ing. Yup, you gotta try it now ;)
This salad got its name when Escondido County encountered a city-wide blackout one year. I had my best friend since Kindergarten over & she requested this salad. This was before we knew we’d be eating a romantic candlelight dinner together ;)
My gal pal & I went to a new Peruvian restaurant in town & I’ve been inspired to cook outside of the box ever since ;) This recipe happened to pop up on my Pinterest (FATE)! Creamy avocado stuffed with a juicy shrimp salad & topped with a zesty cilantro lime sauce. It’s super fresh, bright, tangy, creamy & downright refreshing!
I’m not going to lie; I LOVE mayonnaise in my tuna. It was kind of devastating having to make the switch to “no mayo” tuna. Mayonnaise is so high in fat, saturated fat & also contains 50% of your daily recommended amount of sodium. DEPRESSING, am I right?! Girl, I get it! Once I made this recipe, however, I felt a little less sad about leaving the mayo out. That’s a promise!
