Macarons! One little word. A whole lot of practice batches!
Guys, I NEED to perfect the French macaron. I am on a mission. A macaron mission if you will!! For generations, macarons have stumped even the most advanced bakers. If there is one confectionary treat that takes practice—it’s these bad boys.
When I tried my hand at them for the very first time yearsss back, my batch came out like PERFECTION!! We are talking p-e-r-f-e-c-t.

These classic cookies have been on my to do list for a while now. Now that we’re in quarantine, what better & more valid of a time to eat my feelings!!! Am I right?! I really wanted to make something that would bring a little cheer to the world! It definitely brightened my spirits AND curbed my PMS cravings. HAPPY APRIL FOOLS to me! Thanks period.

Ever try taking pictures of hot freshly baked chocolate chip cookies with your three year old around?? WELL DON’T.
It was like fighting off Orcs at the Gate of Mordor. LOTR reference—anyone, anyone?! Nerd alert!
Anyways, I feel like that should really give you a clue on how out of this world these cookies are. They aren’t “amazing for gluten-free”… they are plain AMAZING. Period.

Guys… I tried & tweaked this recipe FOUR MF’ing times before getting it absolutely perfect!!! You can even be allowed to eat gluten & STILL love the shit out of these bad boys. They're not "great for gluten-free"... they're just GREAT <3

I GET IT—I was skeptical of paleo desserts too! But serrrrriously guys… I would bet $97 that you couldn’t tell these cookies contained no actual refined sugar. It’s kind of amazeballs! The key however, as you will read, is to make these gems with REFINED coconut oil. I know, I know; unrefined is better for you. When you’re making the switch to healthier alternatives however, bring on the refined! A++ for trying! I bow down to Bakerita for coming up with these deliciously dark treats <3
