So what if I was craving Olive Garden’s Zuppa Toscana… & I don’t eat meat?!?! *puts hands in face & cries*
Aaaaaand that’s basically how this recipe was born! I also don’t use cream because it’s not the grrrrreatest for you ;) Ok, so maybe this is more like a healthier, meatless take on the Olive Garden classic! Haha! I promise you though, it’s super fucking delish!!

After being pretty quiet on the blogging front due to moving states, I’M BACK IN ACTION!! As we aren’t settled in completely yet, I was trying to think of something fast & easy I could whip up for dinner! Aaaaaand that is how I came up with this salad; perfect for a weeknight meal. I paired it with a flaky baked halibut & it was phenomenally complementary!
I present THREE green drink recipes to get you started on your green drink journey!! Please read everything below to pick which recipe best suits you. They are all yummy, but basically range from easiest & most pleasurable, to healthy AF & still delicious! They all start out with the same base, & each recipe brings in a new addition of ingredients & benefits. My son has been drinking the “grown ass adult” green drink since he was 6 months old—NBD, he’s a damn champ!! So man up & let’s get started.

This salad got its name when Escondido County encountered a city-wide blackout one year. I had my best friend since Kindergarten over & she requested this salad. This was before we knew we’d be eating a romantic candlelight dinner together ;)
