After being pretty quiet on the blogging front due to moving states, I’M BACK IN ACTION!! As we aren’t settled in completely yet, I was trying to think of something fast & easy I could whip up for dinner! Aaaaaand that is how I came up with this salad; perfect for a weeknight meal. I paired it with a flaky baked halibut & it was phenomenally complementary!

This salad got its name when Escondido County encountered a city-wide blackout one year. I had my best friend since Kindergarten over & she requested this salad. This was before we knew we’d be eating a romantic candlelight dinner together ;)

Let me tell you why I decided to make this salad tonight: it’s fast, easy & PACKED with flavor! Don’t let my long instructions fool you… I ramble.
I get a call from my mom today who decided that she unexpectedly wants to have a sleepover with my son. Do you know what this means to my husband & I?!?! We wanted to make a QUICK ass dinner so that we could get our comfys on & binge watch all the violent, crude ass shows we want!!!!!! This is something my husband & I rarely get to do so we are STOKED.
