So what if I was craving Olive Garden’s Zuppa Toscana… & I don’t eat meat?!?! *puts hands in face & cries*
Aaaaaand that’s basically how this recipe was born! I also don’t use cream because it’s not the grrrrreatest for you ;) Ok, so maybe this is more like a healthier, meatless take on the Olive Garden classic! Haha! I promise you though, it’s super fucking delish!!
I woke up today feeling like I was on the verge of getting sick. We are talking weak, sore muscles, tender neck, & some serious brain fog. I wanted to make something for dinner that was easy but also nourishing as fuck. I remembered a deliciously filling soup I’d made a while back. It was the PERFECT cold weather day or sick prevention soup! It’s a naturally detoxifying soup thanks to the lemon, garlic & turmeric! WIN WIN. Not to mention all of the vitamins & minerals you get from the lentils.

Another excellent weeknight dinner; even better warmed up at work the next day! Wellllllll, minus stinking up your office with the smell of shrimp! But GOOD FOR YOU for not eating out hahaha!
This is such a quick meal prep with very little effort. I’m all about making things that taste like they took all day to make… except they didn’t. Because I got a tornado of a toddler running around & who has fuckin’ time to make a 6 course dinner?! I sure don’t!

I have been making this deliciously creamy fall soup for the past three years now starting in November!! It’s THAT tasty that I keep going back to it. It also just screams H E L L O F A L L !! I made this soup for a Friendsgiving one year & had three people ask me for the recipe! It’s not my own but this recipe sure is a NAILED IT! It’s easy, gluten-free AND Vegan! I added the roasted chickpeas on top to give it a bit of crunch & texture, but that’s really all I did differently (& it’s totally optional).
